Characteristics of the vintage / Tasting notes : Shiny color, brilliant bouquet of exotic fruit, lime, white flowers, arugula flowers, delicate aromas that give in the mouth a mineral dimension and a lemony freshness. Distinct salty finish coming out of this unique terroir. Alcohol by volume : 12.
Keeping potential : 3 to 4 years
Production : After a first sorting performed at the vineyard the grapes are subjected to selective and soft pressing as soon as they arrive. The juices are clarified at low temperature and vinification is traditional in stainless steel vats under controlled temperature. Interrupting the malolactic fermentation ensures that the terroir of Porquerolles is expressed naturally to its fullest potential.
Maturing : Maturation on lees for 4 to 5 months in vats.
