Keeping potential : Rosé : 3 to 4 years White : 4 to 6 years Red : 8 to 10 years
Production : Rosé and White : Soft pressing ensures a careful selection of the musts. The juices are then left to settle at low temperature. Alcoholic fermentation takes place in part in 400-litre casks followed by maturation on lees for 6 months. Red : The grapes are sorted and stemmed. The juices are cooled and left in contact with the must for 48 hours before proceeding with the fermentation that lasts approximately 25 days. The different juices are separated when removing them from the vats in order to retain only the very best.
Maturing : Rosé and White : Maturation on lees for 6 months in casks. Red : Malolactic fermentation takes place in barrels where the juice is placed for 14 months before bottling.
