Characteristics of the vintage / Tasting notes : Dark purple colour, spicy nose with aromas of Eucalyptus and leather revealing a well-structured wine that draws strength in its grapes cultivated on the island’s schists. Keeping potential : 6 to 8 years
Production : The grapes are sorted, stemmed. The juices are cooled and left in contact with the must for 48 hours before proceeding with the fermentation that lasts approximately 25 days. The different juices are separated when removing them from the vats in order to retain only the very best
Maturing : Malolactic fermentation takes place in stainless steel vats where maturing will last 16 months before bottling. .
