Characteristics of the vintage / Tasting notes : The bottle, testimony to its passage through mysterious depths, is studded with marine concretions, and displays on each copy a singular design. The purple color and the fresh and striking mouth with softened tannins make the experience of this wine astonishing. The iodized notes, on the nose and on tasting, unusual in a red wine, bring the grapes back to their maritime genesis and create an unexpected second encounter between land and sea. The wine may present a slight cloudiness linked to its encounter with seawater which destabilize the original product and sometimes cause precipitation.
Keeping potential : 2-3 years
Production : Immergée, this unique cuvée draws it particularity 30m underwater. Mature grapes are picked from the oldest vines of the estate and provide optimal flavors. Once harvested, they are fermented in 400-liter wood barrels during 12 months. The underwater aging for more than nine months creates special exchanges with its environment. This wine is offered like a treasure, and is available in ultra-limited quantities. Grapes are harvested very early before sunrise in order to keep their freshness and to preserve them against oxidation. They come from select parcels planted with old vines of Mourvèdre and Syrah and are harvested and processed separately because of their perfect maturity.
Maturing : Grapes are rigorously sorted, destemmed and kept in cold tanks before racking and the start of the fermentation which last about 25 days. Rigorous selection of the best juices ensues. Malo-lactic fermentation is then held in amphora where the wine will mature for 14 months prior to bottling. Nine months spent at 30m deep will make this wine unique and imbued with its unique underwater environment.
